Mediterranean Baked Feta
Ingredients:
Extra virgin olive oil
1 8 oz block of feta cheese
4 cloves garlic
½ cup cherry tomatoes
½ cup mixed olives
6 sprigs of thyme
Lemon, quartered and zested
1 tablespoon honey
Preheat the oven to 350 degrees. Remove feta from the package and use a paper towel to remove excess moisture.
In a casserole dish, drizzle 1 tablespoon of olive oil in the bottom. Place feta on top. Arrange garlic cloves, cherry tomatoes, mixed olives, and four of the thyme sprigs around the feta.
Squeeze juice of lemon on top. Place lemon wedges around the feta. Strip the thyme leaves from the remaining two sprigs. Sprinkle thyme leaves and lemon zest on top.
Drizzle honey over the entire dish. Add additional olive oil as desired.
Bake in the oven for 30 minutes, then broil for 3 minutes.
