Crispy Sweet Potato Fries and Garlic Dipping Sauce
Sweet Potato Fries:
2 large sweet potatoes
2 teaspoons avocado oil
1 teaspoon smoked paprika
Salt and pepper
Grated Parmesan cheese
Greek Yogurt Garlic Dipping Sauce:
½ cup plain greek yogurt
1 clove garlic, minced
1 teaspoon fresh minced parsley, and additional to garnish
Juice of 1 lemon
Salt and pepper
Cut sweet potatoes into ¼ inch shoe strings. Place in a large bowl with ice water and let soak for at least 30 minutes.
Dry sweet potatoes. Toss in a bowl with avocado oil, smoked paprika, and salt and pepper to taste.
Cook sweet potatoes in the airfryer at 400 degrees for 12-15 minutes, shaking the basket every 5 minutes. I worked in batches and left sweet potatoes in a single layer. Don’t have an airfryer? Preheat the oven to 425 degrees and cook for 20 minutes, tossing halfway through.
While the sweet potatoes cook, sprinkle ¼ teaspoon salt over the minced garlic and scrape/press with a fork until garlic becomes pasty. In a small bowl, whisk yogurt, garlic paste, parsley, and lemon juice. Add salt and pepper to taste. If the dipping sauce is too thick, whisk in a teaspoon or two of water.
Sprinkle parmesan cheese and additional parsley on top of sweet potato fries!
