Avocado Pesto
Ingredients:
1 avocado
1 clove garlic
1 cup fresh basil leaves
¼ cup grated parmesan cheese
¼ cup pine nuts
Juice of ½ lemon
¼ cup extra virgin olive oil
Put all ingredients in a food processor or high speed blender and blend until combined (about 30 seconds).
Blend in additional olive oil for thinner consistency.
Serve with pasta, spread on sandwiches, use as a pizza sauce, or dollop on salads!
