Kale Me Maybe Salad
Ingredients:
Tahini yogurt Dressing:
½ cup nonfat plain greek yogurt
2 tablespoons tahini
1 clove finely minced garlic
Juice and zest of ½ lemon
Salt and pepper to taste
Salad:
Small bunch of kale, removed from stem and cut/torn into bite-sized pieces
Juice of ½ lemon
2 slices sourdough bread
¼ teaspoon crushed red pepper
1-2 cups broccoli or broccolini
1 avocado, cubed or cut into thin strips
¼ cup shaved parmesan cheese
Preheat the oven to 400 degrees. Roughly chop or tear the sourdough bread into large pieces. On a baking sheet, coat sourdough with a large drizzle of olive oil, crushed red pepper, and salt/pepper to taste. On the other side of the baking sheet, toss broccoli in 1 tablespoon olive oil and salt and pepper to taste. Bake for 15-17 minutes.
While bread and broccoli cooks, put kale in a large bowl and squeeze juice of ½ lemon on top. Use hands to massage lemon juice into the kale. This helps the kale soften. Then set aside.
In a medium bowl, whisk all dressing ingredients together. Once combined, whisk in 1 teaspoon of water at a time until dressing has reached desired “pouring consistency”.
Pour desired amount of dressing on top of the kale and toss to coat.
When sourdough croutons and broccoli are done, add to the salad along with avocado and shaved parmesan cheese. drizzle additional dressing on top.
Pro Tip-- I put my avocados on a grill pan to get those nice grill marks!
