Blackberry Lemon Pop-Tarts
Ingredients:
2 packages store bought pie crust- I used Trader Joe’s Roll and Ready Pie Crust
2 6 oz. containers of blackberries
1 lemon, zested and juiced
½ cup sugar
1 ½ teaspoons vanilla, divided
½ tablespoon cornstarch
½ cup powdered sugar
1 tablespoon almond milk
Preheat the oven to 350 degrees.
Put blackberries, lemon zest, lemon juice, ½ cup sugar, and 1 teaspoon vanilla in a pot over medium heat. Heat, stirring occasionally, for about 10 minutes, until mixture is syrupy and blackberries have broken down. Use a spoon to break up remaining clumps of berries.
Dissolve cornstarch in 1-2 tablespoons of water. Add mixture to the pot and stir to incorporate. Reduce heat to low and simmer for 2 minutes. Remove blackberries from heat and set aside to cool.
While blackberries cook, unroll pie crusts. Use a rolling pin to gently roll the dough into thinner sheets. Using a knife, cut 3 inch x 4 inch rectangles.
Spray and flour a baking sheet. Place half of the rectangles on the sheet and spread 1-2 spoonfuls of blackberry filling on top. Place the other half of the rectangles on top of the filling. Using a fork, seal the perimeter of each pasty. Using a knife, poke a few holes in the top of each pastry. Bake for 25 minutes.
While pastries bake, make the frosting by whisking powdered sugar, almond milk and ½ teaspoon vanilla in a bowl. (I added a spoonful of the leftover blackberry filling for some color).
Let pastries cool for 5-10 minutes then spread frosting on top. Eat at breakfast...or dessert!
