Cauliflower Mac & Cheese
Ingredients:
Pasta of your choice (I used Banza Shells)
2 cups cauliflower florets, cut into ½ inch pieces
2 cloves garlic, sliced or minced
⅓ cup parmesan cheese
⅓ cup white sharp cheddar cheese
1 tablespoon low fat cream cheese
¼-½ cup vegetable stock
Chopped parsley
Prepare your choice of pasta according to package instructions. In a large pan, heat 1-2 tablespoons of olive oil over medium heat and add cauliflower. Cook, stirring occasionally, until cauliflower is softened and lightly browned (about 8 minutes). Season with salt and pepper. Add garlic to the pan and cook for an additional 2 minutes.
Put cooked cauliflower and garlic into a food processor with parmesan cheese, sharp cheddar cheese, cream cheese, and ¼ cup vegetable stock. Blend and add additional stock 1 tablespoon at a time until you’ve reached desired consistency.
Taste and season with salt and pepper. Pour over pasta and stir to combine. Garnish with chopped parsley.
