Grilled Halloumi Tacos with Mango Salsa and Avocado Crema
For the Tacos
8 oz block of Halloumi Cheese
8 Tortillas
Olive oil
Salt and pepper
For the Salsa
2 mangos, diced into half inch chunks
¼ cup red onion, finely diced
1 jalapeno, deseeded and finely diced
¼ cup cilantro, minced
Juice of ½ lime
Salt and pepper, to taste
For the Avocado Crema
1 avocado
½ cup sour cream
2 cloves garlic
¼ cup cilantro leaves
1 jalapeno, deseeded
Juice of ½ lime
½ teaspoon salt
Pepper, to taste
Assemble mango salsa by stirring all ingredients in a medium bowl. Set aside (I prepared mine earlier in the day to give the flavors a chance to meld together).
Place the creamy avocado sauce ingredients into a food processor and blend until smooth. Set aside.
Remove halloumi cheese from the packaging and pat dry with a paper towel. Cut halloumi into ¼ inch thick rectangles. Lightly drizzle with olive oil and sprinkle with pepper. Heat a large pan over medium heat (I used a grill pan to get those grill marks). Place cheese slices on the pan and cook for about 3 minutes. Flip cheese and cook for an additional 3 minutes. Remove from the pan.
Working in batches, place the tortillas in the pan to warm (about 1 minute per side).
Assemble the tacos by spreading avocado crema on each tortilla. Top with a halloumi cheese rectangle and mango salsa.
