Quinoa Almond Granola
Ingredients:
2 cups oats rolled oats (not quick oats or instant!)
⅓ cup uncooked quinoa
⅔ cup sliced almonds
⅓ cup unsweetened shredded coconut
1 teaspoon cinnamon
3 tablespoons coconut oil
⅓ cup local honey or maple syrup
1 teaspoon vanilla
¼ cup craisins
¼ cup white chocolate chips
Preheat the oven to 325 degrees. In a large mixing bowl, combine oats, quinoa, almonds, coconut, and cinnamon.
In a small pot, heat coconut oil over low heat until melted. Add honey and vanilla and stir until combined and ingredients are warm. Pour honey and coconut oil into the mixing bowl and stir to combine.
Line a baking sheet with parchment paper. Spread granola in a thin layer. Cook for 15 minutes. Use spatula to toss granola and re-spread. Cook for an additional 3-5 minutes.
Let granola cool on the baking sheet for about 15 minutes. Use spatula to break up large clusters. Toss in craisins and white chocolate chips. Enjoy with fruit, yogurt, chia pudding, or just eat as is!
