White Bean Dip
Ingredients
2 15 oz. cans of cannellini beans, ½ cup of liquid reserved
8 cloves garlic, skin removed
3 tablespoons olive oil, and additional to pour on top
1 tablespoon harissa powder
1 teaspoon salt
1 teaspoon chili flakes
Preheat the oven to 400 degrees. Put garlic cloves on a small square of aluminum foil. Drizzle with olive oil and fold into a pouch. Place the garlic pouch on a baking sheet and cook for 40 minutes. Wait for garlic to roast.
When garlic is roasted, put beans, roasted garlic, olive oil, harissa powder, salt, chili flakes into a food processor and blend until smooth.
Blend in reserved liquid from the beans 1 tablespoon at a time until the dip is smooth and creamy
Transfer to a bowl and top with additional chili flakes and a drizzle of olive oil. Serve with crackers, pretzel chips, or veggies!
