Street Corn

Ingredients:

  • 8 ears of corns, shucked

  • 2 cloves garlic, minced

  • ¼ teaspoon salt

  • ⅓ cup sour cream

  • ⅓ cup mayonnaise 

  • 4 tablespoons Trader Joe’s Everything But the Elote seasoning

  • 2 limes, quartered

  • ⅓ cup crumbled cotija cheese or queso fresco

  • ¼ cup cilantro, roughly chopped

    1. Mince garlic and sprinkle ¼ teaspoon salt on top. Using a fork, scrape the garlic and the salt until a paste is formed. 

    2. In a small bowl, mixed sour cream, mayonnaise, and garlic paste. Set crema aside.

    3. Sprinkle Everything But the Elote seasoning evenly on a plate and set aside. 

    4. Preheat the grill to high. Place shucked corn on the grill and cook, rotating often, until all sides are charred (about 10 minutes total). 

    5. Using a spatula or silicone basting brush, spread crema evenly over all sides of the corn. Roll corn through the Everything But the Elote seasoning. 

    6. Squeeze lime wedged on top corn. Sprinkle with cotija cheese and garnish with cilantro!
