Whipped Feta
It's still August and pumpkin spice just made its season debut at Starbucks, CVS is fully stocked with Halloween candy, and fashion bloggers are pushing ‘sweater weather’ content. Not sure about you, but it is still very much summer for me. I work in a school so any signs of Fall are just a reminder that my summer vacation is nearing an end. My friends and I joke that you can’t use ‘the ‘F’ word’ until at least September.
To protest the season change, I am pledging to not post any Fall recipes until September 22nd (the first day of Fall). Who wants to eat soup in August anyways?
So meet Whipped Feta! This dish could make the perfect app at a summer cookout or a pre-season football game—making it perfect for this time of year! Fresh feta is whipped with dill and lemon for a cool, crowd-pleasing dip!
Ingredients:
1 8oz. block of feta cheese
4 oz. cream cheese
2 tablespoons sour cream
½ tablespoon dill (fresh or dry)
1 tablespoon fresh lemon juice
Zest of 1 lemon
Remove feta from packaging and pat dry with a paper towel. Crumble into large chunks and place in the food processor.
Add cream cheese, sour cream, dill, lemon juice, and lemon zest into the food processor. Blend until smooth.
Transfer into a serving bowl and top with a drizzle of nice olive oil and pumpkin seeds or pine nuts! Serve with pita chips.
