Peanut Butter Blondies
I like to tell people I was raised on peanut butter. This is probably true for most kids, BUT my Dad has worked at a peanut butter factory my whole life. So you could say I bleed PB‒ specifically Teddie peanut butter. This is something I grossly underappreciated as a kid. If only I’d realized that fluffernutters and PB&Js weren’t always going to be a daily staple of my diet!
I’ve still found other ways to incorporate Teddie PB into my diet. It comes in several all-natural varieties (smooth, chunky, and with flaxseed) that are made with only roasted nuts and a little bit of salt. I use these PBs for things like smoothies, pad thai, or to dress up a bowl of oats!
I also love incorporating Teddie into my baked goods and these blondies might be my favorite. They are perfectly rich and fudgy. To get that gooey consistency, I recommend using Teddie’s traditional peanut butter, as opposed to their all-natural brands. You can indulge for this one!
Ingredient:
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
½ cup (1 stick) unsalted butter (melted, then cooled)
1 ½ cups light brown sugar
1 egg
1 tablespoon vanilla
½ cup Teddie peanut butter (avoid all-natural for this recipe)
½ cup peanut butter morsels
½ cup chocolate chips
Preheat the oven to 350 degrees. Spray a 13x9 in. pan with cooking oil and dust with flour.
In a medium bowl mix together flour, baking powder, and salt.
In a larger mixing bowl, beat melted butter and sugar. Mix in egg and vanilla. Mix in peanut butter until just combined.
Blend flour mixture into wet ingredients. Do not over-mix.
Using a spatula, fold in peanut butter morsels and chocolate chips.
Evenly spread the batter into the greased pan. Cook for 30 minutes or until a toothpick comes out of the center clean! Let cool for at least 30 minutes before eating.
