Pico de Gallo
Ingredients:
6-7 roma tomatoes, diced
4 cloves garlic, minced
½ cup red onion, finely diced
2 jalapenos, deseeded and finely diced
¼ cup fresh cilantro, minced
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper, to taste
Combine all ingredients in a medium bowl. Taste, then add salt and pepper. Refrigerate for 1-2 hours before serving, allowing flavors to meld together.
