Pumpkin Spice Whoopie Pies
When I think whoopie pies, I think of being a kid! They were not a treat I had very often, but they were so fun to make...and eat! I mean who doesn’t love eating desserts that come in sandwich form?
These Pumpkin Spice Whoopie Pies offer a sophisticated spin on the childhood favorite. That’s right, you can try to tell your kids these are for adults only— although I don’t think they’ll buy it!
Moist pumpkin spice pies are sandwiched with a sweet, cream cheese frosting for the perfect Autumn treat!
Whoopie Pie Ingredients:
3/4 cups sugar
1/2 cups brown sugar
1 stick butter, softened
2 eggs
1 teaspoon vanilla
1 cup pumpkin purée
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoon pumpkin pie spice
Frosting ingredients:
3 cups confectioners sugar
1 stick butter
8 oz. cream cheese
1 teaspoon vanilla
2 tablespoons maple syrup
Preheat the oven to 350 degrees.
In a large bowl, cream sugar, brown sugar and butter with a hand mixer.
Mix in eggs, vanilla, and pumpkin purée.
In a separate mixing bowl, whisk flour, baking soda, baking powder, salt, and pumpkin pie spice.
Blend flour mixture into wet ingredients. Do not over-mix.
Scoop tablespoon/1.5 tablespoon-sized scoops of batter onto a parchment paper lined baking sheet about 2 inches apart (or lightly spray a nonstick pan with cooking spray).
Bake for 10-12 minutes, working in batches. Remove each pie from pan and cool on a wire cooling rack.
While the pies cook, mix all frosting ingredients in a large mixing bowl with a hand mixer.
Once pies have cooled, spread frosting on the flat sides of half of the pies. Top with the additional pie to make a sandwich. Enjoy!
