Lemon-Dijon Quinoa Salad
Salad Ingredients:
1 cup quinoa, cooked and cooled
1 large english cucumber, sliced and quartered
1 roma tomato, diced
1 avocado, cubed
⅓ cup diced red onion
¼ cup fresh dill
1 can chickpeas, drained and rinsed
Dressing Ingredients:
4 cloves garlic, minced
Juice of 1 lemon
3 tablespoons olive oil
3 tablespoons Dijon mustard
Allow quinoa to fully cool after cooking. Transfer quinoa to a large bowl and mix in cucumber, tomato, avocado, red onion, dill, and chickpeas.
In a small bowl, whisk garlic, lemon juice, olive oil, and dijon mustard. Pour over salad immediately before serving.
