Lemon Blueberry Bread
Ingredients:
½ cup unsalted butter (1 stick)
⅔ cups sugar
2 eggs
½ cup plain or vanilla yogurt (not reduced fat)
1 lemon, juice and zest
1 ½ cups flour
1 teaspoon baking powder
½ teaspoon salt
1 cup blueberries, tossed in ½ tablespoons of flour
Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and sprinkle with flour.
In a large mixing bowl, cream butter and sugar. Add eggs, lemon juice, lemon zest, and yogurt and mix until combined.
In a small bowl whisk flour, baking powder, and salt. Add dry ingredients to the wet ingredients and mix until just combined.
Gently fold in floured blueberries. Transfer batter to the loaf pan and bake for 50 minutes, or until a toothpick comes out of the center clean.
