Fudgiest Sweet Potato Brownies
Ingredients:
1 large sweet potato
⅓ cup peanut butter (I used Teddie Old Fashioned Smooth peanut butter)
⅓ cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla
⅓ cup flour (I used almond flour)
½ cup cocoa powder
1 teaspoon cinnamon
½ teaspoon salt
⅓ cup mini chocolate chips
Sea Salt (optional)
Preheat the oven to 400 degrees. Grease and 8inX8in pan.
Peel the sweet potato and chop into half-inch dice. Put diced sweet potatoes in a large pot. Pour just enough water to cover the sweet potatoes into the pot. Bring to boil and cook until potatoes can easily be pierced with a fork (about 10 minutes). Strain and let cool.
In a large mixing bowl, blend sweet potatoes, peanut butter, maple syrup, melted coconut oil and vanilla with a hand mixer until smooth.
In a medium mixing bowl, whisk flour, cocoa powder, cinnamon, and salt.
Blend dry ingredients into the sweet potato mixture. Fold in ⅓ cup mini chocolate chips.
Spread batter into the pan and cook for 20-24 minutes. Let cool in the pan before cutting.
Sprinkle with sea salt and enjoy!
