Flour-less Cinnamon Apple Pancakes

Ingredients:

  • 2 cups rolled oats

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 2 teaspoons cinnamon 

  • 3 eggs

  • ½ cup coconut oil

  • ¼ cup maple syrup

  • 1 apple, peeled and cubed

  • 1 ½ cups almond milk 

    1. Combine all ingredients in a blender or food processor until you’ve reached batter consistency. If the batter looks too thick, you may need to add additional almond milk (¼ cups at a time). Scape edges of blender to ensure all ingredients have combined. 

    2. Heat pan or skillet over medium-high heat and spray with cooking spray. Once hot, pour ¼ cup portions of batter into the pan. Once bubbles have formed throughout the batter, flip the pancakes (about two minutes). Cook an additional 1-2 minutes on the other side. 

    3. Serve with diced apples, maple syrup, or other pancake toppings (fruit, nutella, nut butters or honey).
