Pico de Gallo

Ingredients:

  • 6-7 roma tomatoes, diced

  • 4 cloves garlic, minced

  • ½ cup red onion, finely diced

  • 2 jalapenos, deseeded and finely diced

  • ¼ cup fresh cilantro, minced

  • Juice of 1 lime

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  1. Combine all ingredients in a medium bowl. Taste, then add salt and pepper. Refrigerate for 1-2 hours before serving, allowing flavors to meld together.
