Lemon-Dijon Quinoa Salad

 Salad Ingredients:

  • 1 cup quinoa, cooked and cooled

  • 1 large english cucumber, sliced and quartered

  • 1 roma tomato, diced

  • 1 avocado, cubed

  • β…“ cup diced red onion 

  • ΒΌ cup fresh dill 

  • 1 can chickpeas, drained and rinsed

Dressing Ingredients:

  • 4 cloves garlic, minced

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • 3 tablespoons Dijon mustard 

  1. Allow quinoa to fully cool after cooking. Transfer quinoa to a large bowl and mix in cucumber, tomato, avocado, red onion, dill, and chickpeas. 

  2. In a small bowl, whisk garlic, lemon juice, olive oil, and dijon mustard. Pour over salad immediately before serving.
