Healthy Oatmeal Cookies

Ingredients:

  • 2 ripe bananas

  • 2 Tablespoons melted coconut oil

  • 1 tablespoon agave or maple syrup

  • 2 tablespoons almond butter (or any other nut butter)

  • ½ teaspoon cinnamon

  • ½ teaspoon vanilla

  • ¾ cup rolled oats

  • ⅓ cup sliced almonds

  • ¼ cup chocolate chips

  • ¼ cup raisins 

  1. Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Add melted coconut oil and stir to combine. 

  2. Add agave, almond butter, cinnamon, and vanilla and stir to combine. 

  3. Add oats, sliced almonds, chocolate chips, and raisins (I used white chocolate chips and craisins). 

  4. Using a spoon, scoop 1- 1 ½ tablespoon sized portions onto a baking sheet. Gently flatten each scoop. Bake for 9-11 minutes.
