Fudgiest Sweet Potato Brownies

Ingredients:

  • 1 large sweet potato

  • ⅓ cup peanut butter (I used Teddie Old Fashioned Smooth peanut butter)

  • ⅓ cup maple syrup 

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon vanilla

  • ⅓ cup flour (I used almond flour)

  • ½ cup cocoa powder 

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

  • ⅓ cup mini chocolate chips

  • Sea Salt (optional)

  1. Preheat the oven to 400 degrees. Grease and 8inX8in pan. 

  2. Peel the sweet potato and chop into half-inch dice. Put diced sweet potatoes in a large pot. Pour just enough water to cover the sweet potatoes into the pot. Bring to boil and cook until potatoes can easily be pierced with a fork (about 10 minutes). Strain and let cool. 

  3. In a large mixing bowl, blend sweet potatoes, peanut butter, maple syrup, melted coconut oil and vanilla with a hand mixer until smooth. 

  4. In a medium mixing bowl, whisk flour, cocoa powder, cinnamon, and salt. 

  5. Blend dry ingredients into the sweet potato mixture. Fold in ⅓ cup mini chocolate chips. 

  6. Spread batter into the pan and cook for 20-24 minutes. Let cool in the pan before cutting.

  7. Sprinkle with sea salt and enjoy!
