Avocado Pesto

Ingredients:

  • 1 avocado

  • 1 clove garlic

  • 1 cup fresh basil leaves

  • ¼ cup grated parmesan cheese

  • ¼ cup pine nuts

  • Juice of ½ lemon

  • ¼ cup extra virgin olive oil

  1. Put all ingredients in a food processor or high speed blender and blend until combined (about 30 seconds). 

  2. Blend in additional olive oil for thinner consistency.

  3. Serve with pasta, spread on sandwiches, use as a pizza sauce, or dollop on salads!
